Episode 1 - Sweet Tooth

Everyone loves deserts and in this episode we look at a variety of Indian subcontinent “methi” (aka “sweets”). With such a contrast of foods available from the Indian subcontinent and an abundance of sweet centres we provide some secrets and some insight to some much loved desserts. Secrets such as having jalebi in hot milk but don’t drink this before bed!!!

"Pakistan Village Traditional Chilla Recipe"

Ingredients
  • 1 glass shakar or gur sugar (gur is a powdered sugar and can be bought from a continental South Asian store)
  • 1/4 teaspoon of baking powder
  • Desi ghee
  • Chapati flour
  • Water
Recipe
  1.  First mix the shakar with water to remove or dissolve the lumps
  2. Use a sieve to drain out the water in to a pan and put to the side
  3. Now mix the baking powder with the chapati flour in a bowl
  4. Then pour the shakar water that you had put aside in to the bowl
  5. Mix until a pancake  mix consistency
  6. Using a frying pan pour in the ghee (clarified butter)
  7. Wait until it is warm
  8. Then using a cooking spoon or a mug pour the batter mix in to the pan
  9. Wait for it to cook slightly on one side and then turn over
  10. Continue to do this until golden brown on both sides
  11. Then serve

Laddu

Ingredients
  • 2 cups of chana atta (flour)
  • 1 cup warm water
  • 4 tbs of ghee
  • 2 tbs baking powder
Recipe
  1. Mix it all together, the batter should be runny enough to drop easily.
  2. Fry it in a hot oil using a colander
  3. Make sugar syrup with one cup water and one cup sugar and heat it up.
  4. Mix it all together.
  5. Make it into small balls.
  6. Serve & enjoy
